Geeky Eats: St. Patrick’s Day Menu

While there is certainly an Irish ancestor or two in my family tree, my immediate family has been in America too long to for any family recipes to have stuck around. So I make do with what the internet has to offer. I love to cook to a theme, and St. Patrick’s day is a great excuse to make food that most of us don’t make every day.

My Menu:

Beer Braised Irish Stew and Colcannon. This recipe calls for a dutch oven; if you don’t have one you can use a slow cooker instead but I would recommend browning the meat in a frying pan first if your slow cooker does not have a sear setting. I use as much beer as I need to just cover the meat and veg, if you want to do the same you may need more beer than the recipe calls for. The cabbage for the colcannon can be blanched in boiling water if you do not have, or prefer not to use, a microwave. You just have to cook it long enough to soften it. I love this recipe because it is hearty and filling and most of the prep can be done ahead of time so if you are having guests you can spend more time visiting and less time in the kitchen.

While not strictly traditional, this recipe for St. Patrick’s Day Cake is a particular favorite of mine. It involves all the important food groups like chocolate and beer. I have found that the third portion of the recipe which is for the ganache for the top of the cake makes more that is really needed to cover the top of the cake and dribble down the sides, and if you prefer just a drizzle I would recommend making only half the amount the recipe calls for.

Add some Irish Soda Bread and the Irish Beer of your choice and you have a simple, tasty menu for your St. Patrick’s Day festivities.
